How do I handle rowdy VIP tables that spend big but ruin the vibe for other guests?
You are not in the entertainment business — you are in the vibe business. One rowdy table costs you 8 other tables' repeat visits. Have a named manager on the floor whose only job is house-management. Give them explicit authority to cut off service, close the tab, and walk the table out — politely, once. Publish the policy on your reservations page. You'll lose 2% of top-line and gain 15% of repeat rate. Every time.
We opened 4 months ago and are losing money every month. Do I reset the menu first or fix ops first?
Ops first. Always. A great menu inside a broken operation is a slow bleed. A tight operation with an average menu is a business you can iterate on. Cut labour ratio to under 22%, fix your pour cost, install a real reservation SOP, and get repeat-guest rate above 25% inside 60 days. Then, and only then, touch the menu. Doing it in reverse costs you a quarter.
My resident DJ costs ₹35K a night. Is that worth it or should I go with rotating cheaper DJs?
Ask a different question — what's your incremental bar spend on nights when this DJ plays vs. nights he doesn't? If the delta is ₹80K+ on average, he's underpaid. If it's under ₹30K, you're overpaying for a brand you're not monetising. A resident DJ is a bar-spend amplifier, not a music expense. Measure him against covers × spend-per-cover, not against 'DJ market rate'.
We hired 22 floor staff for launch. 9 quit inside 60 days. How do I stop the bleed?
60-day attrition in nightlife is almost never about pay. It's about three things — a bad shift roster, no visible career path, and no daily huddle. Fix the roster (predictable, 5-on/2-off), pay them by the 5th of the month religiously, and run a 15-minute pre-shift briefing every single night. Attrition halves inside 90 days. Also — over-hire by 20% at launch, that number you cited is actually not terrible.
My Instagram reels get 40K–80K views but the venue is half-empty on Fridays. What am I missing?
Views are a vanity number. You're missing the funnel between reel and reservation. Three checks: (1) Is the reservation link one tap from the bio? (2) Is the guest experience worth the reel — or is the reel over-promising a venue that under-delivers? (3) Are your reels targeting locals who can walk in, or algorithm-friendly non-locals? Audit those three and you'll typically 2× your walk-in rate in 30 days without adding one new reel.
What's the right salary range for a bar manager in India in 2026? I'm losing candidates to bigger groups.
Metro cities right now: ₹65K–₹1.1L for a solid mid-career manager, ₹1.25L–₹1.8L for a proven head-of-bar with a track record. But base is a losing game against big groups. Add a 2–3% net-margin-linked incentive with a 90-day trigger and a signing 'stability bonus' at month 6. You'll close hires at 15% less base and retain them 3× longer.
My weekday footfall is 40% lower than weekends. Should I shut Mon–Wed and focus only on Thu–Sun, or push harder for corporate events on the slow days?
Don't shut. Slow days aren't a footfall problem — they're a proposition problem. A Tuesday audience isn't a Saturday audience. Design a Tue–Wed programme (industry night, live acoustic, curated tastings) with its own price ladder and its own promoter. If after 8 weeks the contribution margin per Tue–Wed cover is still negative, then cut the days — not before.
